Skate Seafood Salad!??
And yet! We found this interesting traditional recipe of skate salad from the Cycladic island of Paros, Greece - skate is a famous local dish in Paros, and they cook it with a lot of different recipes.
This is a very light and summery dish - filling but not stuffing!
The ingredients that we are going to need for this recipe are the following:
To begin our summery seafood recipe, in a deep frying pan we put the fish broth and the wine put over a medium flame to start boiling. Once at a boil, we lower the flame so it slowly boils. And we put the skate in our pot for three to four minutes.
We remove the fish and let them cool down for a while. And once cooled, we cut the skate along its natural folds to separate the meat. Keep it separate in a bowl.
In a different small bowl, we whisk together the extra virgin olive oil with the lemon juice, along with fresh ground black pepper.
We keep separate two to three tablespoons of our mixtures, and with the rest we marinate our fish for approximately fifteen to thirty minutes.
We then remove the fish with a large-holed spoon.
In another small bowl we mix the finely chopped parsley with the finely sliced onion. We add salt and pepper, and stir with the 2 - 3 tablespoons of our marinade (that we keep from before) and now we stir slowly with our fish all together.
We chop our cleaned lettuce and add it to a large serving salad bowl. Now on top of the lettuce we spread our fish and sauce.
We sprinkle most fresh ground pepper on top of the salad as well as the capers.
This delicious and traditional skate salad is a perfect summer lunch, and pairs beautifully well with either a European-style rose like a Stony Brook Blush, or with a Pinot Grigio, or even with a sparkling Spumante Secco.
It's also a great appetizer dish before a larger fish-based meal, to help open up your appetite without mixing different types of proteins.
